VEGAN PANCAKES

La domenica è l'unico giorno in cui ci concediamo una colazione davvero lunga e abbondante, adoriamo i pancakes ma volevamo rivisitarli in chiave vegan e proteici, ecco i nostri vegan Pancakes proteici.

Ingredienti:
  • 250g farina 0
  • 50g farina integrale
  • 1 bustina di lievito
  • 30g di proteine in polvere Vegan (noi abbiamo usato le Weider vegan protein al cioccolato)
  • mezzo cucchiaio di zucchero 
  • 450ml di latte di soia
  • mezzo cucchiaio di olio di semi
  • olio di semi per oliare la padella

Procedimento:

Mescolare prima tutti gli ingredienti secchi in una ciotola e poi aggiungere gli ingredienti liquidi fino ad ottenere un composto liscio e senza grumi. 
Versare un mestolo del composto in una padella antiaderente leggermente oliata su fiamma medio bassa, coprire e lasciar dorare da entrambi i lati. Lasciar riposare 2-3 minuti prima di mangiare.
Ottimi abbinati a sciroppo per pancake, marmellate acide e banane.

Sunday is the only day when we allow ourselves a really long and abundant breakfast, we love pancakes but we wanted to revisit them in a vegan and protein way, here are our vegan protein pancakes.

Ingredients:
  • 250 g flour 0
  • Wholemeal flour 50g
  • 1 sachet of baking powder
  • 30g of vegan protein powder (we have used Weider chocolate vegan proteins)
  • half a spoon of sugar
  • 450 ml of soy milk
  • half a spoon of seed oil
  • seed oil to oil the pan
Method:
First mix all the dry ingredients in a bowl and then add the liquid ingredients until it'll be smooth and without lumps.
Pour a ladle of the mixture into a slightly oiled non-stick pan over medium-low heat, cover and leave to brown on both sides. Let it rest for 2-3 minutes before eating.
Excellent combined with a syrup for pancakes, sour jams and bananas.

FARIFRITTATA ALLE ERBE SPONTANEE (SILENE) - VEGAN CHICKPEAS FRITTER WITH SPONTANEOUS HERBS

In questo periodo dell'anno i prati dietro casa mia si riempiono di quelle erbe che noi chiamiamo Verzulì (Silene) e dato che mi piacciono molto ho provato a cucinarli nella versione più classica: in una frittata, ovviamente vegan!

At this time of year the lawns behind my house are filled with those herbs that we call Verzulì (Silene) and since I like them a lot I tried to cook them in the most classic version: in an omelette, obviously vegan!





Ingredienti:

  • 150gr di farina di ceci
  • 300ml di acqua
  • 2 cucchiai d'olio EVO
  • 2 manciate di verzulì
  • 1/2 cipolla
  • margarina vegetale BIO (opzionale)
  • sale & pepe
Procedimento
Prepariamo prima la pastella perchè dovrà riposare circa 6/8 ore (se non avete tempo potete farla anche espressa).
Mischio la farina di ceci setacciata con l'acqua e mescolo bene onde evitare si formino grumi, copro la ciotola con la pellicola e lascio riposare in frigorifero.
Dopo aver raccolto i Verzulì, li ho lavati con acqua e bicarbonato, ho tolto i gambi e li ho sbianchiti in acqua bollente per un paio di minuti. Ho tritato finemente la cipolla e l'ho messa a soffriggere con un cucchiaino di margarina, nel frattempo ho tritato grossolanamente le erbe e le ho aggiunte in padella, aggiusto di sale e pepe e lascio insaporire qualche minuto. 
A questo punto accendo il forno a 200°.
Aggiungo due cucchiai di olio EVO alla pastella, amalgamo bene e aggiungo le erbe.
Per la cottura in forno io ho usato uno stampo in silicone per crostate del diametro di 24cm foderato con carta da forno bagnata e strizzata.
Verso la pastella nello stampo foderato e metto in forno nel ripiano più basso per circa 15 minuti e poi lo sposto nel ripiano più alto per altri 10/15 minuti, tenete controllato.
Una volta cotta servitela tiepida o meglio ancora preparatela con un giorno di anticipo e infilatela in un bel panino con insalata, zucchine e maionese come ho fatto io! Ottimo per un pranzo al sacco!

  • 150g of chickpea flour
  • 300ml of water
  • 2 tablespoons of EVO oil
  • 2 handfuls of spontaneus herbs
  • 1/2 onion
  • organic vegetable margarine (optional)
  • salt and pepper
Method
First prepare the batter because it will have to rest about 6/8 hours (if you do not have time you can also express it).
Mix the chickpea flour sifted with water and mix well to avoid lumps, cover the bowl with the film and let it rest in the refrigerator.
After collecting the Verzulì, I washed them with water and bicarbonate, I removed the stems and boiled them in boiling water for a couple of minutes. I finely chopped the onion and put it to fry with a teaspoon of margarine, in the meantime I coarsely chopped the herbs and added them to the pan, adding salt and pepper and letting it flavor a few minutes.
At this point I turn on the oven at 200 °.
Add two tablespoons of EVO oil to the batter, mix well and add the herbs.
For oven cooking I used a silicone mold for tart 24cm diameter lined with wet and squeezed baking paper.
Put the batter in the  lined mold and put in the oven in the lower shelf for about 15 minutes and then move it into the top shelf for another 10-15 minutes, keep checked.
Once cooked serve it warm or better prepare it a day in advance and put it in a nice sandwich with salad, zucchini and mayonnaise as I did! Great for a packed lunch!
