Classic Vegan SUSHI

Io ADORO il sushi, l'ho sempre amato, ma da quando sono vegetariana è molto più difficile trovare proposte interessanti che non costino un capitale. Io e il mio compagno abbiamo allora deciso di provare a farcelo in casa, abbiamo comprato un attrezzo che facilita l'assemblaggio e abbiamo iniziato a sperimentare il Sushi vegano.


I LOVE the sushi, I've always loved it, but since I'm a vegetarian is much harder to find interesting proposals that do not cost a fortune. Me and my partner then decided to try to let us in the house, we bought a tool that facilitates the assembly and we started the vegan Sushi experience .

Occorrente per due persone:
Per il Riso:
  • 400gr di riso per Sushi (o riso Roma)
  • 10 cucchiai di aceto di riso
  • 5 cucchiai di zucchero
  • 1 cucchiaino di sale
  • 600ml di acqua fredda
Per la farcia:
  • 6 fogli di alga nori
  • striscioline di avocado
  • striscioline di cetriolo (spesse circa 1 cm)
  • lattughino
  • maionese veg
  • salsa sriracha (opzionale) - si tratta di una salsa thailandese  agrodolce e piccante, si trova abbastanza facilmente nei supermercati ben forniti.
Need for two people:
For the rice:
  • Rice for Sushi 400g (or rice Roma)
  • 10 tablespoons rice vinegar
  • 5 tablespoons sugar
  • 1 teaspoon salt
  • 600ml of cold water
For the filling:
  • 6 sheets nori seaweed
  • strips of avocado
  • strips of cucumber (about 1 cm thick)
  • lettuce
  • mayonnaise veg
  • Sriracha sauce (optional) - this is a sweet and sour and spicy Thai sauce.
Preparazione del Riso:

La preparazione del riso richiede un pò di pazienza ma è necessario seguire per bene tutti i passaggi altrimenti il riso non avrà né la consistenza né il sapore giusto. Va preparato o il giorno prima o la mattina per la sera.
Per prima cosa bisogna lasciate in ammollo, in una bacinella di plastica o legno (mai metallo), 10 minuti il riso nell'acqua fredda, dopodiché bisogna strofinare il riso con le mani e continuare a risciacquare il riso con acqua fredda e scolarlo finché l'acqua nella ciotola sia completamente trasparente. Si tratta di un'operazione che vi porterà via tempo ma è assolutamente necessario farla.
Mettete il riso in una pentola capiente e copritelo con acqua fredda( deve essere sempre due dita superiore al riso) e coprite con un coperchio ( possibilmente di vetro trasparente,questo vi renderà più facile controllare il riso).
Portate a bollore a fuoco alto: appena bolle,abbassate il fuoco e fate sobbollire per 12 minuti. Non aprite MAI il coperchio. L'acqua si ritirerà del tutto ed è quello che dovrete ottenere. Appena sarà pronto, spostate la pentola fuori dai fornelli, e lasciate riposare il riso per almeno 10 minuti.

Preparing the rice:

The preparation of rice requires a little patience, but you must follow all the steps for good otherwise the rice will have neither the consistency nor the right flavor. It is prepared or the day before or the morning for the evening.
First you need to let it soak, in a plastic or wooden bowl (never metal), 10 minutes the rice in cold water, then you have to rub the rice with your hands and continue to rinse the rice with cold water and drain it until the water in the bowl is completely transparent. This is an operation that will take away time but it is absolutely necessary to do it.
Put the rice in a large pot and cover with cold water and cover with a lid (possibly transparent glass, this will make it easier to control the rice).
Bring to boil over high heat: just boils, lower the heat and simmer for 12 minutes. Do not open the lid. The water will withdraw completely. When it is ready, move the pot off the stove, and let rice stand for 10 minutes.

Nel frattempo preparate il condimento : in un pentolino scaldate l'aceto con lo zucchero e il sale fino a che non sarà sciolto del tutto.
Trasferite poi il riso in una ciotola di plastica e versate lentamente il condimento sul riso, mescolando delicatamente con un mestolo di legno ( mai di acciaio o metallo). Coprite il riso con un canovaccio molto umido e lasciate a temperatura ambiente.
Una volta che il riso sarà completamente raffreddato è pronto per essere trasformato in ottimo sushi!

Meanwhile, prepare the sauce: In a saucepan heat the vinegar with the sugar and the salt until it is dissolved.
Then transfer the rice into a plastic bowl and slowly pour the sauce over rice, stirring gently with a wooden spoon (never steel or metal). Cover the rice with a very damp cloth and leave at room temperature.
Once the rice is completely cooled it is ready to be turned into great sushi!

Procedimento per la farcia:
Disponete il riso sull'alga e al centro del riso ponete le striscioline di avocado e cetriolo, spalmate la maionese mischiata con la salsa sriracha sopra alle verdure e poi aggiungete qualche fogliolina di lattughino e arrotolate. Per chiuderlo bagnate l'estremità dell'alga che così facendo si incollerà.
Tagliate molto delicatamente il rotolo in "fette" da circa 1cm ciascuna.
Servite con una ciotolina di salsa di soia dove intingerli.

A process for the filling:
Place the rice on the seaweed and put in the middle of the rice the strips of avocado and cucumber, spread the mayonnaise mixed with Sriracha sauce over the vegetables and then add a few leaves of lettuce and roll. To close the roll, wet the edge of the seaweed and roll it.
Very gently cut the roll into "slices" of about 1cm each.
Serve with a small bowl of soy sauce to dip them where.
